Ingredients

  • 860 g hulled ripe strawberries
  • 3 1/4 cups shredded fresh coconut or unsweetened flaked coconut
  • 3 1/4 cups coconut juice or water
  • 13 tablespoons lemon juice

Tablespoons here are 15 ml. An Australian tablespoon is 20 ml — use three teaspoons instead.

Instructions

  1. Use strawberries that are properly red through to the centre. A pale-shouldered berry is mostly water and acid, and with only four ingredients here there is nothing to hide behind.
  2. Blend the strawberries, coconut, coconut juice and lemon juice until no shreds of coconut remain whole. A surviving shred stays chewy in a cracker that is meant to snap.
  3. Let the mixture stand for a minute and skim off any foam. Blending whips air in, and each bubble dries into a weak spot that tears when you lift the sheet.
  4. Pour it onto a lined tray and tilt the tray until it finds its own level, rather than banging it on the bench. A thin puree finds its own level unaided, and knocking the tray splashes it up the sides where it burns.
  5. Spread it to a square of about 25.4 cm with a spatula and square the edges. Coconut fat makes this mixture cling to a spatula, so wet the blade.
  6. Dehydrate at 52 °C for 6 hours to set the surface.
  7. Score the sheet into 2.5 cm squares while it still takes a line cleanly, cutting through to the liner.
  8. Give it another 6 hours, transferring the sheet onto mesh once it lifts in one piece.
  9. Break the squares apart only once they are stone cold. Coconut oil is soft at room temperature and firm when cool, so a warm cracker always feels underdone.
  10. Keep them in a sealed tin and eat them within a fortnight. Coconut fat is what limits these, not the fruit — once they smell soapy rather than sweet, they have gone.
