Ingredients

  • 1.8 kg ripe apples (about 10 medium), organic
  • 3 1/4 tablespoons cinnamon, ground
  • 3 1/4 tablespoons granulated sweetener
  • 6 3/4 tablespoons lemon juice, optional

Tablespoons here are 15 ml. An Australian tablespoon is 20 ml — use three teaspoons instead.

Instructions

  1. Pick a firm sharp apple over a soft sweet one. A mealy apple collapses on the mandolin and dries limp, and the acidity in a sharp variety also slows the browning.
  2. Take the top and the stem end off so the fruit sits flat, then run it through a mandolin at 5 mm. Cut by hand the slices will vary by a millimetre, and a millimetre is two hours in this recipe.
  3. Push the core out with a corer first if you want rings, or leave it and flick the pips from each slice afterwards for a fuller chip. Keep the peel either way — it holds a slice together as it shrinks.
  4. Toss the slices with the cinnamon and the sweetener, lifting from underneath as you go. Sprinkled over the top, the cinnamon lands entirely on the slices facing upwards.
  5. Lay them flat without overlap and dry at 57 °C for 7 hours. They curl at the edges as they go, which is fine, but a slice folded right over stays soft where it touches itself.
  6. Pull one out near the end and let it cool for a minute before you decide anything. Judged on the tray you will overshoot every single time.
  7. A finished chip breaks with a snap and has no give at the centre. For chewy ones instead, take them off while they still fold — but then treat them as a fridge item rather than a pantry one.
  8. Keep the crisp ones in an airtight jar with the lid firmly on for two months. They pull moisture out of the air within an hour of being left open, and a softened chip can be brought back with a short run in the machine.
