Ingredients
- 1 cup rolled oats
- 1/2 cup sunflower seeds
- 1/2 cup hemp seeds
- 1/3 cup golden berries (use raisins or cranberries if desired)
- 1.8 kg medium or large-sized roasted beetroot, chopped (use roasted, steamed, or raw if desired)
- 6 large medjool dates, pitted, soaked for 4 hours and drained
- 1/2 cup water
- 1 tablespoon coconut oil
- 1 teaspoon cinnamon
- Pinch of salt
Instructions
- Roast the beetroot rather than boiling it. Boiling leaches sugar into the water, and that sugar is the only sweetness here besides the dates.
- Soak the dates and keep a little of their soaking liquid back. If the purée is too stiff to pour it will sit on the oats in lumps instead of coating them.
- Blend the beetroot, dates, oil, cinnamon, water and salt until there is no grit left in it. A fleck of unblended date is a wet spot that never finishes.
- Fold the purée through the oats, sunflower seeds, hemp and golden berries until every oat has gone pink. Any oat the mixture misses stays pale and tastes of nothing.
- Spread it on a lined tray no thicker than a finger and flatten the heaps. Hemp seed is oily and the mixture wants to clump; a clump dries into a soft lump.
- Dry at 46 °C for 7 hours, turning it over with a fork twice so the underside changes places with the top.
- It is done when a handful left to cool on the bench rattles and the pieces break rather than bend. Warm granola always feels crisper than it is, so judge it off the tray.
- Keep it in a sealed jar for a month. Hemp oil turns quickly once it has been warmed, and the first sign is a smell like old paint rather than any change in the texture.
