Ingredients

  • 7/8 cup apple juice, unsweetened
  • 1.3 kg medium-size apples (about 7 medium), cored and sliced into rings, about 1/4 inch thick
  • 7 medium-size bananas, sliced into rounds, about 1/4 inch thick
  • 3 3/4 tablespoons ground cinnamon
  • 7/8 teaspoon ground nutmeg

Tablespoons here are 15 ml. An Australian tablespoon is 20 ml — use three teaspoons instead.

Instructions

  1. Cut the apple rings and get them into the apple juice inside a minute. Juice from the same fruit does the browning job that lemon does elsewhere without making the chips sour.
  2. Slice the bananas straight onto their tray and do not dip them. Banana falls apart in liquid and a dipped round arrives on the tray as a smear.
  3. Keep both fruits at about 6 mm. Any thinner and the banana will not survive being lifted off the tray.
  4. Give apples and bananas separate trays. Banana takes several hours longer than apple, and putting them together means either leathery apple or still-sticky banana.
  5. Dust both with the cinnamon and nutmeg while the surfaces are damp. Nutmeg in particular is potent, so err low — you cannot brush it off later.
  6. Dehydrate at 57 °C for 10 hours. Peel the banana rounds up and turn them over around the middle of the run; they weld themselves down as their sugar comes to the surface.
  7. Apple is done when a ring is dry to the touch with no glistening spots. Banana is done when it has gone from cream to amber and no longer dents under a fingernail.
  8. Switch the machine off and leave the trays inside with the door shut to cool. They crisp as they cool, and moving them to a cold bench too quickly makes them pick up condensation.
  9. Once cold, jar the two separately. Apple holds six months and banana about three — banana carries more sugar and goes sticky first.
