- Take the turkey down to bare muscle: no skin, no fat, no silver membrane. Poultry fat turns rancid faster than beef fat does, and there is no cure in this list deep enough to hold it back.
- Firm the meat in the freezer until a knife meets resistance instead of sinking straight in. Turkey breast is soft and tears under a blade at room temperature.
- Cut strips 6 mm thick, running across the grain of the breast. Cut the other way, meat this lean comes out stringy rather than chewy.
- Dissolve the brown sugar fully into the soy sauce before the liquid smoke and the two paprikas join it. Undissolved sugar settles to the bottom of the dish, and the strips underneath end up candied while the ones on top are merely salty.
- Turn the strips so every face is wetted, cover the dish, and refrigerate it for four to six hours. Much longer and the soy takes the surface past seasoned into inedible.
- Lift each strip out, let it drain, and blot it. Liquid smoke left pooling on the surface concentrates into something acrid rather than smoky.
- Lay the strips out without letting them touch and dehydrate at 68 °C for 14 hours. Poultry gets the higher setting for a reason, and lowering it to protect the texture is the one change not worth making here.
- Cool a strip and then bend it. It should crack along the fold and show white fibres without parting; one that folds limply goes back on, and one that breaks in half has gone past jerky.
- It holds a week in a jar at room temperature, a month in the fridge, or six months vacuum-sealed in the freezer. Any white bloom or any sour note means the batch goes in the bin rather than the lunchbox.
