Ingredients

  • 1/2 cup dehydrated shredded potatoes
  • 1/4 cup store-bought powdered milk
  • 2 teaspoons store-bought powdered cheese
  • 1 teaspoon dehydrated chopped onions

Tablespoons here are 15 ml. An Australian tablespoon is 20 ml — use three teaspoons instead.

Instructions

  1. Sift the milk powder and the cheese powder together before anything else joins them. Both cake in the packet, and a lump of milk powder will not dissolve once boiling water hits it — it sets into a skin and floats.
  2. Stir the shredded potato and the onion through the powders until the colour is uniform. The potato is the bulk here, and if the powder settles to the bottom of the bag the first serve is bland and the last one is salty.
  3. Pack it into a vacuum bag with an oxygen absorber for the long haul, or a zip-top bag for something you will eat this month. The difference between the two is oxygen rather than moisture, because the fat in the cheese powder is what goes stale first.
  4. Sealed against air it holds a year in a cool cupboard and about a month in a plain bag. Warmth is what shortens it, so keep it off the top of the fridge and out of the car.
  5. To cook, pour two-thirds of a cup of just-boiled water straight into the bag and seal it again immediately. The trapped steam is doing the work, and a bag left open loses the heat it needs.
  6. Leave it five minutes, knead the bag through a tea towel to break up the pockets, then give it another ten. Shredded potato takes water from the outside in, and that second rest is what softens the middle.
  7. It is ready when a shred squashes flat against the roof of your mouth with no chalky core. If it has gone cool before it is soft, stand the sealed bag in hot water for a couple of minutes rather than adding more water.
